Olympia Oysters are the ONLY NATIVE oyster to the west coast of North America. Unique in many ways, this petite beauty has a colorful interior marbled with hues of brown, green, and gold. The intoxicating natural display makes these oyster shells superior for art and jewelry craftsmanship.
From 1850-1900, overharvesting of "little Olys" depleted this natural resource. Recent efforts are being made to restore the population while bringing awareness to this native mollusk, its flavor, beauty, and role in the Puget Sound culture and ecosystem.
